Our Origin

 

How We Started: Inspired by an epic year and half stint of traveling and cooking in some great restaurants around the world, Adam Mayer (our very own founder and Chief Deliciousness Officer) set out in January of 2020 to leave restaurant life behind and start doing some pop ups. The goal was to imagine what it would look like to marry the world’s greatest bar food, pintxos, with one of the great bar cities, New Orleans. The goal was to provide something new to the city that was not represented in existing pop ups or restaurants, and to create an ethical business model from the ground up that would give back and support the community around it. From day 1 Txow Txow has made it a point of donating a portion of our sales each month to charities that support the New Orleans community and other important causes.

 

It looks like there’s a lot going on here. Well, you’re right. After more pivots than you can shake a stick at, we’ve become a deliciousness clearinghouse! Although our Txow Txow pop ups have become more sporadic, you can still occasionally find us out serving that good food at New Orleans’ finer bars and breweries. Mostly though, our focus these days is on Donostia Supper Club and Catering. Donostia is our homage to the Basque fine dining culture, taking the shape of medium format (4 to 6 course) tasting menus cooked at secret locations around the city. Our menu changes for each edition of these dinners, and is only revealed on the day of the event. You can also find us throughout the holiday season slinging spuds with our seasonal pop up Latke Daddy, the pop up that asks “How much traif can one guy put in between two latkes?” And lastly, we love to do private events! We specialize in in-home private dining for groups up to 25 people, but we’ve also done weddings and gatherings of up to 120! Hey, one more question! What are pintxos anyway? Pintxos are to Basque country what tapas are to Southern Spain. Small snacks, usually no more than a few bites, meant to be eaten standing up while socializing with your people. Pintxos can be as simple as a piece of cheese on bread, or as complex as cocina miniatura, mini versions of fully composed elevated dishes. At Txow Txow, we serve a menu of seasonally inspired pintxos which capture, in a few bites, the intersection of Basque cuisine and Louisiana flavor.
